Real Belgian fries (From Spain)

Ingredients
potatoes (1 large one each person)
What do you need for preparation?
deep fryer
cutting board
peeler
potato peeler
Method
1. Peel the potatoes and cut them in slices (1 cm).

 2. Cut the potatoes into sticks (1 cm).



3. Wash the fries. Dry all the pieces thoroughly in a clean dish towel. So they won’t stick and this will keep the oil from splattering.
                   
  




     4. Divide the potato sticks into batches of no more than 1 cup each. Do not fry more than one batch at a time.


5. When the oil has reached the desired temperature (140 degrees Celcius), fry the potatoes for 4 to 5 minutes per batch. They should be lightly colored but not browned.


 
6. Drain the fries on fresh paper towels or brown paper bags and let them cool down.

7. Repeat for all the batches.

8. Heat the oil to 160 ° Celcius.


Fry the potatoes in 1-cup batches until they are nicely browned and crisp, 1 to 2 minutes.


9. Sprinkle with salt and serve with mayonnaise
